Originally a seasoned cook, Lindsey found herself gravitating out of the kitchen to behind the bar, and like a happy hermit crab she has found her home made of fire and rum. With a strong background in cooking having learned from some of the best chefs in Portland, she quickly developed a knack for Tiki bartending and has proved her salt behind the bar. When not working her cinnamon sorcery at Hale Pele or your Tiki themed private event, she can be found exploring the PNW with her pup Maggie the Boston Terrier, shredding the slopes of Mt. Hood and surfing the waves of the Oregon coast, or after a few rums caught rambling on in Spanish about her days in Barcelona and her dreams of the next adventure.

Kevin is a Portland native who has worked all across town in various bars and restaurants for the past 15 years. He spends his free time DJing and performing with his Dungeons and Dragons themed rap group.

Beth has been with Hale from the beginning as the opening chef. Eventually though, enchanted by the barkcloth and floral hairpieces, she traded in her knife roll for a serving tray. This was not before disappearing for 6 months to perfect her cinnamon sorcery skills. No one really knows where she was during this time, but rumor has it that when she returned she had grown a third eye that she keeps hidden under her bun. When she's not at HP she can be found studying at PSU, escaping from rooms, or working on next year's Halloween costume. She's easy to spot as she's the only staff member with their cat's name tattooed on their arm, but don't stare, the third eye sees all......

Paddy Holland

Paddy became enchanted by Tiki culture in the early 2000s after visiting Trader Vic'c in Emeryville, CA. After a few years spent cultivating this interest as a hobby, he got his first bartending job at Forbidden Island in Alameda, CA in 2009. Paddy moved to Portland by way of Eugene, OR in 2011, working at a few non-tiki bars along the way. In 2013 Hale Pele provided a fitting return to Tiki. These days he splits time between his Hale Pele family and his real family of wife and 3 kids.

From Florida, to Argentina, to Oregon, Coleton has been traveling while working in several industry positions along the way. When not serving up some cinnamon sorcery at Hale Pele, you can find him serving aces on the tennis court or drinking scotch and taking his cat outside on a leash.

Sierra Kirk

Assistant Manager/Bartender

After relocating to Portland from New Orleans where she bartended for many years, Sierra developed a passion for hiking and can bore you for hours recounting her adventures with her husband Josh. She loves reading, travel, cocktails, costumes, all things Goth, dance parties, and the rain! When not hanging out with her cats or being a general recluse, she can be found behind the bar at Hale Pele dazzling people with her cinnamon skills & Tiki creations. She still misses the city that care forgot, and all of her friends there, but can’t imagine leaving the PNW.

Mindy Kucan

Bartender

Originally from Texas, Mindy spent time in Austin working at a major hotel for 5 years. She entered the Hilton Hotel's Top Bar Chef Challenge and won the National title in 2007. That is when she discovered she wanted to be a career bartender. Eventually she moved back to her home town of Houston to work at a high volume craft classic cocktail bar called Anvil Bar and Refuge. While working there, she was named Houston Press' Best Bartender 2010. In September 2011, Mindy attended the highly acclaimed spirits tasting seminar, Beverage Alcohol Resource, and completed the course as Bar Ready. Shortly after that, she moved to Portland, Oregon to work at the cocktail bar Beaker and Flask. In July of 2012, Mindy was asked to help open and execute the beverage program at Hale Pele and has been there ever since.

Now, Mindy is currently in college, aspiring to get a degree in chemistry. She hopes to become a distiller one day and dreams of being a perfumer. She spends her free time with her cats, Stinky and Mr. Mumbles, and learning how to bake at home.

Tara McCarron

Bartender

Originally from the Olympic Peninsula, Tara relocated to Portland with her fat cat Miette, and her boyfriend (and fellow HP employee) Isaiah. Tara still misses the salty air and the stormy waves of the ocean, and loves to set off the thunderstorms at Hale Pele! She is an avid podcast listener and a lover of all things amaro, although now she love all things r(h)um. Her dream job would be to be paid to travel around the world eating and drinking and visiting new places but concocting tiki drinks and learning and talking about rum is a close second!
